Farmer’s Pantry Cornbread Crisp Recipe

Ingredients
2 cups Farmer’s Pantry Cornbread Crisps, crushed
3 cloves of garlic, diced
1 small onion, diced small
2 stalks of celery, diced small
2 pounds of Italian Sausage – casings removed
½ cup grated Parmesan Cheese
1 small potato, mashed
1 cup chicken broth or chicken stock
How To Prepare
Cook Italian Sausage until done, but do not crisp. As it cooks, use a wooden spoon to create small pieces. Remove from pan and set aside.
Sautee garlic, onion and celery in olive oil until golden brown (about 8-10 minutes on medium heat).
Remove from pan.
Add all ingredients and mix in a large bowl.
Grease a baking pan, and cook at 350 degrees for 40 minutes.
Serve hot, or cover and heat the next day.

My Thoughts
I'm a southern girl, but didn't grow up eating a lot of cornbread because my parents were northerners and never really ate it. When I became an adult I tried it in different varieties and have found a few recipes I really enjoy. I looked forward to trying these cornbread crisps from Farmer's Pantry.
I got to try 3 flavors: honey butter, original, and jalapeño. I didn't expect for jalapeño to be my favorite because I'm not a fan of jalapeños, but this was really good. There wasn't much of a kick, so don't expect spicy. The jalapeños just seemed to add a unique flavor that the other two flavors didn't have, causing me to gravitate toward that flavor more when enjoying Farmer's Pantry for a snack.
I liked the honey butter favor too. It gave a sweet flavor and almost reminded me of sweet cornbread. I think if I could have warmed these crisps up, the flavor to sweet cornbread would have been spot on. I also enjoyed the original flavor too. It was slightly salty, but not like when eating chips.
I liked these crisps. The texture and thickness. Perfect for snacking on when you want something crunchy but could also be used with a favorite dip.
