Chicken Meatballs

Ingredients
1 cup Crunchmaster Sea Salt Multi-Grain Crackers
1 pound ground chicken
1 one-inch piece fresh ginger, grated or finely minced
2 small garlic cloves, grated or finely minced
4 scallions (green onions), finely minced
2 tablespoons gluten free soy sauce
½ teaspoon freshly ground black pepper
1 large egg, lightly beaten
Directions
Preheat oven to 400 degrees. Spray two baking sheets with gluten free, non-stick cooking spray and set aside.
Grind the Crunchmaster crackers in a blender or
food processor to fine crumbs. Pour into a large mixing bowl and add the
remaining ingredients. Mix to combine. Shape into small balls using
about one tablespoon of mixture per ball. Place
on the prepared baking sheets and spray the meatballs lightly with
gluten free, non-stick cooking spray. Bake for 15 minutes or until the
meatballs are browned and feel firm to the touch. Remove the meatballs
to a plate lined with paper towels to absorb any
extra fat. Serve with your favorite gluten-free barbecue sauce or Thai
peanut sauce. Makes about 30 meatballs.
White Cheddar Stuffed Mushrooms

Ingredients
- ½ cup Crunchmaster White Cheddar Multi-Grain Crackers, crushed
- ¼ cup grated Pecorino Romano cheese
- 2 oz. soft goat cheese, crumbled
- 2 garlic cloves, peeled and minced
- ¼ cup chopped fresh parsley
- ¼ tsp. sea salt
- ¼ tsp. freshly ground black pepper
- 2 Tbsp. olive oil
- 28 large white button mushrooms, stemmed
Directions
1.
Preheat the oven to 400 degrees F. Prepare a large baking dish with nonstick baking spray.
2.
Stir the Crunchmaster Crackers, Pecorino Romano, goat
cheese, garlic, parsley, sea salt and pepper and olive oil in a large
bowl; mix well to combine.
3.
Stuff the filling into the mushroom cavities and arrange on the baking sheet.
4.
Bake until the mushrooms are tender, approximately 25 minutes.
5.
Serve warm.
My Thoughts
I try my best to keep my family as active as possible. Both of my children are involved in sports and their TV and video game time is limited to an hour a day. But it's also important to watch what they eat. I also worry about my husband because he isn't getting any younger and he complains about eating healthy foods even more than the kids do. It isn't easy to find fun snack foods that are good for them and that they are actually willing to eat. That's why I was really happy to try out a few of the delicious varieties of crackers and chips from Crunchmaster. These crispy snacks are gluten free, cholesterol free and saturated fat free. They are also a good source of fiber. And the best part of all is that they taste just as good as any other snacks.
We received a few varieties of Crunchmaster to try out. I personally LOVED the Multi-Seed Crackers. They are so tasty, you don't really need to put anything on them, but they are the perfect compliment to any cheese or meats. I thought they were better than most of the popular name brands crackers. They are light and crunchy and not greasy at all. The Sea Salt were tasty too. They are lightly salted and nice and crispy. They both have lots of flavor, and don't taste like card board like most gluten free products. My kids and my husband loved them too. They would never have guessed they were a healthier alternative to regular crackers. But I know the difference, and even if they cost a little bit more, they are definitely worth it because they are so much healthier for my family.
If you want something sweat, The Grammy Crisps are the perfect choice. They taste just like graham crackers, but they are gluten free. Each one is smothered in Cinnamon flavor. My two younger children thought they were fantastic Finally, we tried the Popped Edamame Chips. These are a light and crispy chip that are just delicious alone or with dip or salsa. The sea salt are plain while the Wasabi Soy variety have a bit of a spicy bite to them. These bags didn't last long with two teens in the house.
