I could tell by the dark color and texture that it was as fresh as possible and newly roasted. You can tell it was freshly ground right before it was sealed. When I made it, I had to stand there and watch it brew, feeling my mouth water as I waited. And I wasn't disappointed. It was smooth, not bitter at all, and strong without being overpowering. Literally, some of the best coffee I've ever made at home.
