Truvia - The Lunch Makeover Challenge



With the kids back in school, its easy to take the easy road and toss sugary snacks into their lunch bags. But with Truvia, giving your family some healthier options doesn't have to be a hassle. They have come up with dozens of quick and easy recipes that you can in-cooperate into your kids daily routine.  Truvia is an all natural sweetener made from the Stevia plant.  Stevia is safe for diabetics, is kosher, and contains no calories.  Just one packet provides the same level of sweetness as two packets of sugar.  You might find it hard to believe that all this can be true and you are still getting the sweet taste you crave. I doubted it too. Until I look the Truvia Lunch Makeover Challenge.

Taking the challenge was simple and fun. Truvia sent us a few boxes of sweetener, a gift card to purchase additional ingredients, and tons of recipes. I am far from a good cook, but the recipes were all quick and easy. I made Fudgey Brownies, Chocolate Chip Cookies,  Chocolate Pudding and more, all using Truvia instead of sugar.  I didn't tell my family about the switch. I just packed their lunches as usual and sent them on their way. Here is one of the recipes we used.




Reduced Sugar Fudgy Brownies with Truvia Natural Sweetener

3 ounces unsweetened baking chocolate
¼ cup unsalted butter
¼ cup canola oil
2 eggs, large
3 1/2 Tbsp Truvia® natural sweetener spoonable*
¼ cup sugar, white granulated
½ tsp salt
1 tsp vanilla extract
2 Tbsp skim milk
¾ cup all purpose flour
½ tsp baking powder

* or 12 packets Truvia® natural sweetener

Optional Garnish: Make powdered Truvia® natural sweetener by blending 2 Tbsp + 1 tsp Truvia® natural sweetener spoonable* and 1 Tbsp of corn starch in a blender on high for 1 minute. Lightly sprinkle this powdered garnish on brownies using a tea strainer. Store leftover garnish in a sealed container.

* or 8 packets of Truvia® sweetener


Instructions


1. Assemble all ingredients.
2. Preheat oven to 325°F.
3. Place baking chocolate, butter and canola oil in a large microwaveable bowl. Heat for 30 seconds, stir. Repeat and stir to melt the chocolate.
4. Whisk together the eggs, Truvia® natural sweetener, sugar, salt, vanilla and milk in a separate small bowl.
5. Add the egg mixture to the chocolate mixture and stir until well combined.
6. Sift together the flour and baking powder.
7. Fold flour mixture into the chocolate mixture using a rubber scraper, until just combined. Do not over mix.
8. Pour batter into an 8x8 square pan.
9. Bake for 22-25 minutes. Do not over bake.
10. Remove from oven and place on a cooling rack for at least 20 minutes.
11. Cut into sixteen squares.



This is just one of the tasty recipes you can find at Truvia. My children loved all the sweet treats I baked up for them, and had no idea there was anything different about them.  Even my chef husband had to admit Truvia tasted just as good as sugar. And it isn't just great for cooking. You can sprinkle a little on your fruit or add some to your coffee, all without adding any extra calories.  I know that now that I  have taken the challenge, I will be switching to Truvia for good. Its a great way to start losing those extra baby pounds!
