Pork Chops in Apple Jalapeno Barbecue Sauce Ingredients
Preparation
1. For the Apple Jalapeno Barbecue Sauce, in a medium saucepan combine apple pie filling, the vinegar, onion, cilantro, jalapenos, chipotle, chili powder, 1 teaspoon salt, and the cumin. Bring to boiling. Reduce heat and simmer, uncovered, 15 minutes or until jalapenos are tender. Remove from heat. Use an immersion blender to blend the mixture in the saucepan, or cool slightly and transfer to a food processor or blender. Cover and process or blend until smooth. Return mixture to saucepan, if needed. Whisk in tomato paste, mustard, and Worcestershire sauce. Bring to boiling. Reduce heat and simmer, uncovered 15 minutes, or until sauce thickens to desired consistency. Cover and refrigerate unused portion up to 2 weeks.
2. Season chops with 1/2 teaspoon salt and the pepper. In a very large skillet, heat the oil over medium-high heat. Add chops to skillet and cook 5 minutes, turning once, until nicely browned. Add 1 1/2 cups of the Apple Jalapeno Barbecue Sauce. Bring to boiling. Reduce heat and simmer, covered, 15 minutes, or until pork is tender.
*Note: Because hot chile peppers, such as jalapenos, contain volatile oils that can burn your skin and eyes, avoid direct contact with chiles as much as possible. When working with chile peppers, wear plastic or rubber gloves. If your bare hands do touch the chile peppers, wash your hands well with soap and water.
