Keep on Bakin'...Gluten-Free Style, With Among Friends

Healthy Baking Mixes For the People You Love

As I get older, I find myself wanting to eat healthier, be it less carbs, less fat, or less gluten. Who knows what goes in half the stuff you buy in the store...really.

I definitely miss some things, especially cookies, so I was eager to try these new baking mixes from Among Friends.

About the company: They currently produce five cookie mixes and one crisp topping mix, and their mixes are made with GMO-free, whole grain ingredients, four of them being gluten-free. Easy to assemble, they bake up in less than 10 minutes. It is the perfect product to bake with kids, or to have in the pantry when you need some home-baked goodies in a hurry. Their cookies are named after their children.

First, I received the Evan's Heavenly Spelt Oatmeal Raisin.


What they say:
Velvety soft spelt flour combines with hearty oats, organic raisins, almond meal, and a hint of cinnamon for a memorable version of this classic cookie.

What I say: I'm not a fan of raisins...but holy moly, I took one bite of the finished product (NOT expecting to like it) and had a hard time refraining from eating more than my share. After all, I have to leave some for the hubby. The raisins are there but they aren't so heavy that they dominate the cookie. You can def taste everything else. Perfect combination of flavors. The consistency was very cookie-like and didn't stick to the fingers too badly as I made balls of them. The ingredients were simple. I had these made in no time.

What they say: 

Premium cocoa and chocolate with a hint of espresso make it hard to believe this melt-in-your-mouth cookie is whole grain and low calorie.

What I say: Again, I really liked them, maybe not as much as the raisin ones (I know, I'm surprised too!) but they were good. They passed the hubby test also. He finished them off. The cocoa is subtle, but that's to be expected. I did NOT add sugar to the top, as I feared it wouldn't be healthy any longer. The consistency was difficult to work with though. The lack of flower in these makes the batter very sticky and rolling them into balls made quite a mess. We jokingly called them turds, but don't let the appearance deceive you. 

I'd also like to add that I have tried gluten-free baking mixes from the store and wasn't keen. I'm not saying they taste bad but one gluten-free mix I got for chocolate chip cookies required an entire stick of butter. I like that these cookies--at least these two--were only 4 to 6 TB and you can also substitute oil or vegan ingredients in the place of the butter.

OH. I also like that they stay soft. Usually, when I make "normal" cookies, they harden quicker than I would like and I have to put a slice of bread in the container with them. Not so with these. They stay soft on their own, nice and chewy.
