Summer Splash! SeaPak Shrimp Scampi Review & Giveaway

I live at the Jersey Shore so of course I love sea food. But I don't always have the time to prepare it fresh.  So its great to find frozen foods that taste as good as home made. And SeaPak shrimp is so good you'll think you got it fresh off the boat.

For review, we tried out the shrimp scampi. It must have been great because I had barely put them on the table and they had disappeared. Each one was plumb and delicious. They are prepared in a classic blend of garlic butter sauce with a hint of lemon.They contain a healthy dose of Omega-3s and vitamin D in 12 minutes or less. This shrimp scampi is as good as anything I ever had in a restaurant, and its great with pasta, rice, or vegetables!  For more ideas on how to use your shrimp, check out these tasty recipes:

Popcorn Shrimp Mac ‘N Cheese

1 package (20 oz) SeaPak Popcorn Shrimp or SeaPak Shrimp Poppers

1 package macaroni and cheese

Milk and butter as needed to prepare macaroni

Shredded cheese of your choice

Prepare shrimp and macaroni and cheese according to package instructions. Pour macaroni into serving dish and top with hot shrimp.

Baja Popcorn Fish Tacos

Tacos:

1 (22 oz) package SeaPak Popcorn Fish, frozen

8-10 soft flour, heated according to package directions (can substitute crispy corn tortillas)

1 (16 oz) bag of fresh slaw (or 1/2 head of shredded cabbage)

1 (11 oz) can mandarin oranges, drained

1 (15 oz) can black beans, rinsed and drained

1 avocado, diced

2 Tablespoon fresh cilantro chopped (optional)

Juice from 1 lime (about 2 tablespoons)

1 tablespoon honey

Taco sauce (recipe below)

SeaPak’s Tasty Taco Sauce:

8 oz sour cream

1 (1 oz) packet ranch dressing mix

1 (1.25 oz ) packet taco seasoning

Preheat oven to 425F. Bake popcorn fish according to package instructions. Mix sour cream, ranch dressing and taco seasoning.  (You can use a little milk to thin the sauce if desired.) Chill in the refrigerator until ready to serve. Place slaw (or shredded cabbage), mandarin oranges, black beans, avocado, cilantro in a large bowl. Place lime juice and honey in a small bowl and stir together. Pour over slaw mixture and toss until well mixed and coated. Assemble tacos. Spoon 1-2 tablespoons of Taco Sauce onto a tortilla.  Add slaw mixture and top with a hot popcorn fish. Serve immediately.

Shrimp for Grown-Ups

Tangy Lemon Pepper Shrimp with Broccoli

1 (12 oz) package SeaPak Scampi, frozen

½ lb angel hair pasta, dry

1 package broccoli, frozen

1 teaspoon lemon pepper

2 tablespoons Dijon mustard

½ cup dry white wine

Cook pasta according to package directions. Heat large sauté skillet on medium for 1 minute. Add frozen shrimp to pan and sauté 5 minutes. Steam broccoli in microwave according to package instructions. Drain broccoli and add to skillet with shrimp. Whisk lemon pepper, Dijon mustard and wine in a small bowl. Pour mixture over shrimp and broccoli. Stir well. Simmer for additional 3 to 4 minutes, until shrimp are cooked, stirring frequently. Toss shrimp and broccoli with pasta and serve.  Variation: For Crispy Lemon Pepper Shrimp, use 1 package SeaPak Popcorn Shrimp. Heat according to package directions and then toss in with broccoli and sauce mixture.
